About the Producer:
The roots of this brilliant adventure go back to the 1800s, when Ferruccio Biondi Santi planted the first Montalcino vineyard with vines of a selected clone of Sangiovese, called Sangiovese Grosso or Brunello: it was the first step towards a new way of making wine that would soon in the history of Italian wine. Nowadays, the estate’s 50 hectares of vineyards are exclusively dedicated to 3 grapes varieties: Cabernet Sauvignon, Merlot and Sangiovese Grosso BBS11, the historical and unique clone discovered and developed by the Biondi Santi family. The estate’s unique terroir and its microclimatic characteristics are the key elements that make Biondi Santi wines so valuable and recognized worldwide.
About the Wine:
A Supertuscan that combines precious traditions with the pleasure of modern taste. Of great personality, Schidione - a blend of Sangiovese grosso BBS 11, Cabernet Sauvignon and Merlot - owes its name to the medieval spit used to roast game, which links it to the tradition of great "meditation" reds. Vineyard grown on soil with galestro mineral varieties contribute to an optimal development of the plant by giving its fruits unique and representative scents of the terroir. Exposition to west and south-west, at 300m to 500m altitude. Harvested in October. Separate vinification for each grape variety with long lasting maceration (18 days) including the malolactic fermentation. Aged in barriques of Tronçais wood for 24 months blending for nearly 6 months in stainless steel.
Organoleptic Notes:
Intense ruby red with garnet tones. Elegant and complex with notes of spices and vanilla. Dry, ample, vanilla tannings, very persistent on the palate.
Pairing: Important meat dishes and game, seasoned cheeses.
