About the Producer:
Cantina di Negrar was founded in 1933, its wines are rooted in the winemaking tradition of Valpolicella and the Veronese wine-growing areas, with a modern reinterpretation to guarantee the best quality and price ratio. Founded in 1933, the altitude of its vineyards vary between 100 to 250 meters above sea level. Soil type is varied, mainly clayey-limey, partly limestone, partly of volcanic origin.
About the Wine:
Located in the heart of the Soave area at an altitude between 100 and 250m above sea level with southwest exposure. Soil type: mainly limestone, sometimes clayey. Grassing of the vineyard. Training system: Veronese pergola. Age of producing vines: from 15 to 20 years. Load of buds per vine stock: 22. Planting density: 2,500/3,500 vines per hectare. Yield per hectare: 100 hl. Harvest is in September, exclusively hand-picked. Crushing with de-stemming of the grapes and immediate separation of the skins through soft pressing. Fermentation without skins at a controlled temperature of 14-16 °C, then steel. Stabilization: protein and tartaric.
Organoleptic Notes:
Straw yellow with floral, intense, and refined bouquet. Dry, medium bodied, with just a hint of typical bitter almond and hints of dried fruits.
Pairing: Starters and fish dishes; a lovely aperitif.
